Hey, who remembers all that zucchini we had growing in our garden? Well, a couple months back i finally forced myself to freeze some of it, and im glad i did!
Enter this soup. It my version of the minestrone soup from Olive Garden, and its perfect for a cold, rainy day. And it has zucchini in it! Perfect.
I followed this recipe, except i left the soup chunky and added in cooked pasta. Next time i think i will also add some canned beans. Add grated Parmesan on top and enjoy!
