Eating at home.

Turkey sandwich on ciabatta w/chips.
Beef Stew w/ceaser salad.
Egg w/sauteed potatoes, baby bell peppers, mushrooms and tomatoes.
 Pancakes w/strawberries, whipped cream and a mango and orange salsa.
 Mashed potatoes w/chicken and mushrooms. Salad.
 Shrimp fettuccine alfredo w/ceaser salad.
 Eggs and pancakes.
 Beef stroganoff w/mashed potatoes and a broccoli, tomato and carrot salad. 
 Eggs w/hash browns and vegetables.
 Guacamole w/crusty bread and deli meat.

We love eating breakfast around here. But most of the time it ends up being either eggs or oatmeal. I really want to branch out and try some different things for breakfast... I think this next week i will try to be more creative. Do any of you have some breakfast suggestions?

My first harvest. I am now a farmer.

Today i pulled a green onion and radish out of the ground. And I am so proud of them. In my silly excitement i yelled to Viktor, "Look at what I made!" Of course all i did was plant the seed and water it, but i feel so accomplished somehow. I think I am now a farmer...

7 months old.

My baby turned 7 months old last Saturday. I told Viktor, "Oh my gosh, she's almost a year old now!" and he goes, "No she's not, she's only one month over half a year..." I guess i just feel like she is growing up so fast... I mean, she could be walking in a couple months or something! (although highly unlikely..) 
Anyways, I adore Audrey's smiles. They make me feel so much better if I'm tired or sleep deprived. And I swear I heard her say "mama" a couple of times now...

I like my plants.

I'm pretty sure these are all some kind of succulents/cactuses, so they are not a pretty sort of plant, but i like them anyways. In fact, i like them a lot! They are easy to take care of, and look very interesting. I never knew that i would like plants so much, but I just might have a green thumb (if the garden produces and thrives...)

On a separate and unrelated note, Viktor and I have been totally obsessed with watching The Amazing Race on Youtube. They have all the seasons on there, and we have watched about 12 of them. And this is all in a month period of time i think... We like it so much that we talk about signing up for being on the show. Its mostly a joke, although i am totally serious about it. But we need to become American citizens first... If you've never seen the show, watch it here. Its super fun. :)

Eating at home

Quinoa and kale pilaf w/almonds, lemon and goat cheese. Apple juice.
 Chicken Banh Mi.
 Herb potatoes w/grilled beef and zucchini. Salad w/tomatoes, bell peppers, cucumber, avocado and cilantro.
 Pan fried cod w/carrots and parsnip puree. Salad w/baby greens.
 Pasta w/pork meatballs and tomato sauce. Crusty bread and ceaser salad.
 Leftover pasta and cod w/green onion.
 Cauliflower and parmesan soup.

Food in the ground.

Things are looking promising in the garden lately. There have been some disappointments, but nothing that cant be fixed (hopefully). Some of the cucumbers died, so i replanted them. Also the tomato and pepper transplants didnt make it, so i planted pepper seeds into the ground already, and the extra tomatoes are still growing in their individual containers. I have been putting them outside a lot so they harden up and get used to the outdoor before they go in the ground. I think that was my mistake with them the first time around. The potatoes are sprounting out too, although i did recently pull one out because i thought it was a weed... All in all I am enjoying watching my garden grow. And learning a lot in the process!

Grillin' it up!

We have been grillin' it up lately with the warm weather upon us. There has been teriyaki beef, zucchini and corn. And STEAK. Yummmm... My husband really knows how to make it tasty. And of course i provide the sides. 

Sadly its freezing cold outside right now, so maybe ill go make some soup to make myself feel better while dream about steak...

Plants and other things.

These are my plants and i like them. I have more different ones indoors, 4 more to be exact. But these are really neat. I like to grow things, and I feel sad if they wilt and die. I love my vegetable garden already, (if I can say that) and it didn't even produce anything yet. A dream of mine (and of Viktor's too I think) is to one day have a big garden with lots of food growing. And next to it have some fruit trees and berry bushes. And have chickens running around and laying eggs for us. And have little children running amongst the chickens. I would cook good food and can lots of things like jams and pickles and pickled beets! And we would have a home with a porch and twinkling lights in the evening and music. And flowers.

Back when Audrey was 6 1/2 months old...

...I took some pictures of her. I love my daughter. Even when she gets sick on mothers day. I love when she smiles, and when she is fast asleep in my arms i hold her a little tighter and thank God for the beautiful girl he gave me.
