Breakfast vegetable saute with egg

 This is a simple but satisfying meal and it includes a ton of veggies. Make it for breakfast!
You will need:
bell pepper
green onion
dill weed
salt and pepper

Start off with sauteing the potatoes and carrots in some olive oil along with some rosemary. When the potatoes start to brown up a bit, throw in the mushrooms and bell pepper. When the mushrooms start to brown, season with salt, pepper, and paprika. Next, add in the tomatoes and green onions. Crack in an egg and finish off with some avocado and dill. Eat at the table while looking at the flowers your husband just got you ;) Delicious!

I'm (almost) a big kid now!

The little babe has learned to turn on her side! Such an accomplishment ;) She is getting bigger and smarted by the days. And such a personality! Im starting to see that she is very strong and determined and a little bit stubborn. She tries so hard to grab things with her tiny hands, and when she cant get it, she becomes frustrated. I think she will be a fast learner and i cant wait to see it all unfold before my eyes... and man, time flies by so fast... it seems like it was just yesterday when we brought her home for the first time and she was so so tiny in my arms... (it makes me a little bit sad, i need to cherish all these moments)

Piroshky piroshky: an afternoon in Seattle

It was all nice and sunny today and Viktor had last night off so we decided to head to Seattle. On the agenda was to look at some rugs for our living room, but also to just get out to the house, breathe some fresh air and have some fun. Ok people, how cool is world market? It has such neat things! One thing that really stood out for me is that they sell neat looking containers of spices and all just for $4. That's like a good deal at a regular grocery store, and some spices that i always want are like $9! So yeah, i was impressed. 
We also got to take a stroll down Pike Place market, and even though they were closing down, i really like the feel of it. Especially the fresh produce. Venders kept offering little sample of their loot, and i happily ate it all. I tried a chocolate noodle, cherry jam and vegetable chips. Which by the way i want to try to make at home...
And happily Piroshky Piroshky were still open! For some reason i really like their piroshky :) Especially the potato ones. Have you guys ever been there? It makes me feel all Ukrainian when i eat them. ;) 

(oh and also we took a little pink monkey with us on this adventure. and she did so good! she likes to hang out. literally...)

Eating at home, right now

Late night snack, avocado and cheddar cheese sandwiches w/tomatoes and green onion.

We got to hang out with some friends after church, and it turned out into a nice long evening full of babies playing and grownups catching up. Audrey even took turns pulling on a toy with one of the boys. ;) Its so nice to have friends with babies, i cant wait for them to all get just a little bit older so they can all have fun together!

Yay for cribs!

We finally got Audrey a crib, and she looks so tiny in it! Like a wee little bebito. :) But i think she likes it because she can sleep through the whole night and seems happy. Also if i put her toys close to her, she can play in there by herself for like half and hour. Yay!

In other news, i really need a date... i told Viktor this morning and hopefully we can arrange something soon. I just really miss hanging out with him outside our home. Sometimes i get cabin fever. (or house fever?) Dinner and a movie has never sounded so good... Is there any movies out in theater that someone can recommend? I really don't get out much. Oh! Except today im planning to go to the grocery store with Audrey, so that should be exciting! ;) Actually, the other day i went with her to the mall, so im not a total hermit. And she did really well, so i think as soon as the weather becomes nicer we will be going out for walks and such... Can't wait!

little blocks

This is still Audrey's favorite way to sit these days. As soon as i straighten her out, she's back to being all sideways. So interesting...
We bought her some blocks in a wagon a few days ago that have the alphabet on them. They are a little too big for her to hold, but she likes to chew on them with her gums sometimes. I think they are really cute and cant wait for her to get a little older and start playing with them more.

Eating at home, this week

 Pastrami sandwich w/cherry tomatoes and bell pepper strips. Tomato juice.
Toasted raisin english muffin with homemade plum jam and bananas. Coffee.
 Cottage cheese with raisins, cranberries, and honey. Peppermint tea.
 Fried rice w/shrimp stir fry and cherry tomatoes. Water. 
 Boiled egg and potatoes w/radishes, tomatoes, carrots and avocado.

chocolate chip and poppy seed muffins

I made some muffins yesterday because i really missed baking. I now vow to bake more! Like maybe once a week or something. They turned out really nice and moist. I really wanted to make them with some fruit, but we didn't have any so i used chocolate chips and poppy seeds.

(makes 6 muffins)

1 cup flour
1/4 cup white sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 tbs and 2 tsp vegetable oil
1 egg
1 tbs sour cream
1/2 cup chocolate chips
1 tbs poppy seeds

1 tbs white sugar
1 tbs brown sugar

1. Preheat the oven to 400 degrees F and grease or line the bottom of a muffin pan.

2. Mix all dry ingredients (flour, sugar, baking powder, chocolate chips and poppy seeds) in one bowl and the wet into another. Then add the wet to the dry and fold together really carefully until the mixture just comes together. It will still be lumpy.
3. Fill the muffin cups 2/3 full and sprinkle a little white and brown sugar on the tops. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool 1 minute before removing from pan.

kitsya likes it here

This kitty cat is feeling very much at home these days. Her favorite spot to sit is the window sill in the living room. Its a very big window and she can see cars passing by. And crows and seagulls! I was very surprised by how much birds are around here. And so was Kitsya. :)

Thoughts for a busy girl: is it important to be pretty?

 I have to be honest, today is the first time in 2 weeks that i have put makeup on and did my hair, ever since we moved into our new house. Life has just been really busy. But yesterday was a pretty overwhelming day, and it got me thinking: I need to take the time to take care of myself. 

I dont think its important to be pretty, but to feel pretty. Its amazing how much better i feel about myself and my busy life if i take the time to put some makeup on, fix my hair and put some pretty clothes on. Audrey actually takes about 3 naps a day, a couple hours each. So i decided to use her first nap in the morning to fix myself up a bit and just have some tea and relax. Have some ME time. Then i feel ready to tackle my day. Do any of you out there feel the same? What do you do to make time for yourself?

Leftover sauteed potatoes and an egg w/carrots, tomatoes and avocado. Milk.

we got the billy!

If you know anything about Ikea, you know that they have Swedish names for all their items. Our table is Jokkmok or something like that. Viktor and i used to laugh about it a lot because we think the name is funny ;) Now we are owners of a new bookshelf called the Billy. Its really nice and simple, but i look at those empty top shelves and imagine lots more books to come... and it makes me excited. There is a bookstore close to where we used to live that sells books by the pound! I think I'm going to have to go visit it soon... unpacking, unpacking, forever unpacking...

 These last couple weeks have been busy, and internet-less. Is that a word? Viktor and i realized how much we rely on it :) But as of today, we and Mr. Internet are close again. This unpacking business is taking a lot longer than we had anticipated. As Viktor said, we unpacked enough to live, and forgot about the rest.
